Ingredients
- 3 cups cooked black-eyed peas or black beans (or two
- 15-ounce cans, drained and rinsed; try a mix or any type)
- 1½ cups cooked corn (fresh or frozen, or a 15-ounce can
- drained and rinsed)
- 1 bunch cilantro
- 1 bunch green onions (5 green onions)
- 3 medium tomatoes (or a 15-ounce can diced tomatoes,
- drained)
- 1 avocado, if desired
- 1 Tablespoon oil
- 2 Tablespoons vinegar or lime juice
- ½ teaspoon each salt and pepper
Directions
- Drain and rinse the black-eyed peas (or black beans) and corn.
- Finely chop the cilantro and green onions.
- Dice the tomatoes and avocado, if desired.
- Combine all vegetables in a large bowl.
- Mix the oil, vinegar or lime juice, salt and pepper together in a small bowl.
- Pour the oil mixture over the vegetables and toss lightly.
