Buttermilk Scones

Ingredients

  • 1 cup whole-wheat flour or use all-purpose flour
  • ¾ cup all-purpose flour
  • ⅓ cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup dried fruit like raisins, cranberries or bits of apricot
  • or mango
  • ¼ cup margarine or butter, melted
  • ⅔ cup buttermilk

Directions

  1. Preheat oven to 400 degrees F.
  2. Combine the flours, sugar, baking powder, baking soda and salt in a medium bowl. Mix well.
  3. Add the dried fruit and mix lightly.
  4. In a small bowl, combine the melted margarine or butter and buttermilk.
  5. Add the liquids to the dry ingredients and mix gently.
  6. On a greased baking sheet, spoon the dough into 9 equal mounds.
  7. Bake until golden brown, 18 to 20 minutes.
  8. Serve hot or at room temperature.
