Tabbouli

Ingredients

  • 1/2 cup Bulgur Wheat
  • 3 medium tomatoes, finely chopped
  • 1 cup parsley, finely chopped
  • 2 cups green onion, finely chopped
  • 1/3 cup lemon juice
  • 2 tsp salt
  • 1/3 cup olive oil
  • 2 Tbsp fresh mint, chopped or 1 Tbsp dried mint

Directions

  1. Wash bulgar wheat, cover with 1 cup hot water and let stand for30 mins.
  2. Drain the bulgur wheat and squeeze out the moisture.
  3. Mix together the chopped tomato, onion, and parsley. Stir in lemon juice and salt.
  4. Mix in bulgur wheat until well blended. Chill for at least 2 hrs.
  5. Just before serving stir in the olive oil and mint.
