Ingredients
- 1/2 cup Bulgur Wheat
- 3 medium tomatoes, finely
chopped
- 1 cup parsley, finely chopped
- 2 cups green onion, finely
chopped
- 1/3 cup lemon juice
- 2 tsp salt
- 1/3 cup olive oil
- 2 Tbsp fresh mint, chopped or 1
Tbsp dried mint
Directions
- Wash bulgar wheat, cover with
1 cup hot water and let stand for30 mins.
- Drain the bulgur wheat and squeeze out the moisture.
- Mix together the chopped tomato, onion, and parsley. Stir in lemon
juice and salt.
- Mix in bulgur wheat until well blended. Chill for at least 2 hrs.
- Just before serving stir in the olive oil and mint.
