Ingredients
- 1/3 cup rice vinegar
- 2 tbsp sugar
- 1 tsp olive oil
- 1/2 tsp salt
- 2 large cucumbers
- 3 green onions
- 1/4 cup chopped peanuts
- 1/4 tsp red pepper flakes
Directions
- In a bowl, combine rice vinegar, sugar, oil, red pepper, and salt. Mix together.
- Peel and slice the cucumbers. Place the sliced cucumbers in the bowl with the dressing.
- If you haven't already done so, chop the peanuts. Slice the green onions.
- Add the peanuts and green onions to the bowl and stir to combine. Serve immediately or leave in the refrigerator.
